If you like cinnamon flavour in pastries then you will like this cake that has a topping of speculoos cookie butter. Speculoos cookies are reminiscent of the taste of cinnamon cookies and if you have eaten bastogne cookies or lotus cookies then you know how speculoos taste. You can decorate the cake with some extra cookie butter.
Speculoos Swirl Cake
30 g butter, softened
200 g cream cheese
1 dl coconut sugar
0.5 dl stevia sugar
1 egg
2 dl flour
1 tsp baking powder
pinch of salt
0.5 almond milk
0,5 dl speculoos cookie butter, melted
Stir together butter, cream cheese, sugar and egg. Add the dry ingredients together with the milk. Mix well. Pour batter into a 16 cm baking pan lined with parchment paper. Top with speculoos cookie butter. Bake at 175 C for 30 minutes.

30 g smör, mjukt
200 g färskost
1 dl kokossocker
0,5 dl stevia socker
1 ägg
2 dl mjöl
1 tsk bakpulver
en nypa salt
0,5 mandelmjölk

Mums det ser gott ut. Vi har nu mycket speculoos här överallt,när ostkakahelget närmar sig (jag kallar det ostkakahelg,för alla lagar här ostkakor just då) och här tycker man användä speculooskex som botten.
