During Easter we ate this dish. Filo spring rolls with a spicy filling and a tasty sauce made of fresh oranges. Inspiration for this dish I got from the magazine Vegetarian Living.
Halloumi
Spring Rolls with Roasted Cauliflower and Orange Sauce
1
large head of cauliflower, broken into florets
2
cloves of garlic, finely chopped
zest
and juice of 1 lemon
olive
oil
1
onion, finely chopped
¼ hard white cabbage, finely shredded
2
carrots, grated
2
tsp paprika
2
tsp cumin powder
pinch
of sambal oelek
300
g halloumi, grated
8
sheets of filo pastry
butter,
melted
zest
and juice o 2 oranges
1
tsp Dijon mustard
1
tsp sugar
100
ml rapeseed oil
Preheat
the oven to180C. Toss the cauliflower florets with the garlic, lemon zest and
juice, a good pinch of sea salt, ground black pepper and enough olive oil to
generously coat. Place on a baking tray and roast in the oven for about 25
minutes, turning regularly until the cauliflower is lightly golden and can be
pierced easily with a fork.
Meanwhile,
fry the onion and cabbage in a hot wok or frying pan with a little rapeseed
oil, turning constantly. After about 2 minutes, when they are beginning to
colour, add the sambal oelek, paprika and cumin and cook for a further 2
minutes. Remove, from the heat and set aside to cool completety, Toss the
halloumi together with the onion mix. Lay out a sheet of filo pastry and
lightly brush with melted butter. Place another sheet on top and brush again
with butter. Place a quarter of the halloumi mix on the filo in a sausage
shape, leaving a 3cm from the bottom edge. Starting from the bottom roll the
filo over the halloumi mix, folding in the edges, then continue to roll up
entirely into a sprig roll shape. Repeat with the rest of the halloumi mix.
Brush the spring rolls with a little more butter then bake for 10-12 minutes,
turning once, until crisp and golden.
Meanwhile,
place the zest and juice of the orange in a saucepan and heat until reduced by
half. Remove from the heat and allow to cool. Add the mustard and sugar. Slowly
add the rapeseed oil while blitzing continually with a hand blender, until you
get a thick emulsion. Add a splash of water to loosen the dressing and more
sugar if it seems too sharp.

vitkål, fint strimlad

morötter, riven
2
tsk paprikapulver
2
tsk spiskummin pulver
nypa
sambal oelek
300
g halloumi, riven
8
ark filodeg
smör,
smält
skal
och saft av 2 apelsiner
1
tsk dijonsenap
1
tsk socker
100
ml rapsolja
Värm
ugnen to180C. Blanda blomkålsbuketter med vitlök, citronskal och saft, en god
nypa havssalt, svartpeppar och olivolja. Placera på en bakplåt och rosta i
ugnen i ca 25 minuter, vänd regelbundet tills blomkålen är lätt gyllene och
mjuk.
Samtidigt
fräs lök och kål i en varm wok eller stekpanna med lite rapsolja, rör om hela
tiden. Efter ca 2 minuter, när de börjar på färg, tillsätt sambal oelek,
paprikapulver och spiskummin och stek i ytterligare 2 minuter. Ta från värmen
och ställ åt sidan att svalna. Blanda halloumi tillsammans med lökmixen. Lägg
ut ett ark filodeg och pensla lätt med smält smör. Placera ett ark ovanpå och
pensla igen med smör. Placera en fjärdedel av halloumiblandningen på filoarken
i en korvform, 3 cm från den nedre kanten. Rulla filo över halloumimixen, vik
in kanterna, fortsätt sedan att rulla ihop. Upprepa med resten av
halloumimixen. Pensla vårrullarna med lite mer smör och grädda i 10-12 minuter,
vänd en gång, tills de är knapriga och gyllene.
Samtidigt
placerar skal och saft av apelsin i en kastrull och värm tills vätskan
reducrats till hälften. Ta bort från värmen och låt svalna. Tillsätt senap och
socker. Blanda i långsamt rapsolja samtidigt som du mixar med en stavmixer,
tills du får en tjock emulsion. Lägg till ett stänk av vatten om det behövs och
mer socker om det verkar för skarp.
