This is a "take what you have in the fridge" dish. And I can say that it turned out really well. We ate it with vegetarian patties. Simple and no food waste.
Vegetable & Minced Meat Casserole
0.5 zucchini, grated
1-2 carrots, grated
0.5 capsicum, diced
1 dl chopped leek and red onion
2 dl tomato sauce
soy minced meat
grated cheese
salt
black pepper
Mix all the ingredients, except the cheese, in an oven proof dish dish. Season with salt and black pepper. Top with grated cheese. Bake at 175 C for about 20 minutes.
Grönsak & Maletköttlåda
0,5 zucchini, riven
1-2 morot, riven
0,5 paprika, tärnad
1 dl hackad purjolök och röd lök
2 dl tomatsås
sojamaletkött
riven ost
salt
svartpeppar
Blanda alla ingredienser, förutom osten i en ugnsform. Salta och peppra. Toppa med riven ost. Grädda i 175 C i ca 20 minuter.

Serbså gott ut. Jag har alltid soja maletkött (den torra varianten) i köket, så lätt att använda. Ha en fin kommande vecka Katarina 💐
