I follow @susannamoen on Instagram and she has many different recipes for healthier snacks and these balls are one of them. I have made my own version of her gingerbread balls and they taste like gingerbread dough, which is the best :) I like to eat them straight out of the freezer, but they are also good refrigerated.
Pepparkaksbollar
10 st
80 g torkade plommon
80 g mandelmjöl (ca. 2 dl)
20 g kokosolja
3 tsk pepparkakskrydda (8 g)
en nypa (fling)salt
vatten
Mixa alla ingredienser till en slät blandning i en matberedare. Tillsätt eventuellt lite vatten för att få en formbar smet. Rulla till bollar och förvara i kyl eller frys.
Gingerbread Balls
10 pieces
80 g dried plums
80 g almond flour (approx. 2 dl)
20 g coconut oil
3 tsp gingerbread spice (8 g)
a pinch of (flake) salt
water
Mix all ingredients to a smooth mixture in a food processor. If necessary, add a little water to obtain a malleable dough. Roll into balls and store in the fridge or freezer.
