Blodapelsinera är i säsong nu och visst är färgen helt otrolig på dem. Mina som jag köpte var fortfrarande ganska sura, men jag tycker om dem ändå. Och så kan man gärna baka med dem :) Titta vilken fin färg glasyren fick av blodapelsinen! En saftig kaka med skal och saft från blodapeskin i smeten och saft i glasyren. Ha en fin dag!

Blood oranges are in season now and the color is absolutely incredible. Mine that I bought were still pretty sour, but I like them anyway. And you can bake with them :) Look what a nice color the glaze got from the blood orange! A moist cake with blood orange zest and juice in the batter and juice in the icing. Have a nice day!


Blood Orange Yogurt Cake


25 g butter, melted

25 g coconut oil, melted

1 dl sugar

1 large egg

1 dl plain greek yogurt

1 blood orange, zest

2-3 tbsp freshly squeezed blood orange juice

0.5 tsp vanilla extract

1 3/4 dl wheat flour

1 tsp baking powder

one pinch of salt


Icing:

powdered sugar

freshly squeezed blood orange juice 


Preheat the oven to 175 C degrees C. Butter and flour a small bundt cake pan.


In a bowl melt the butter and coconut oil. Add the sugar and stir. Then add the egg and stir well. Add the yogurt, orange zest, orange juice, vanilla and the dry ingredients. Stir to combine. Pour the batter into the pan and bake for 20-25 minutes, or until the center is set and a toothpick inserted comes out clean. Let the cake cool in the pan, then remove it and put on a plate. Stir the powdered sugar and juice together in a bowl until smooth. Pour it over the cake once cooled.



Blodaplesin Yoghurtkaka


25 g smör, smält

25 g kokosnötolja, smält

1 dl socker

1 stort ägg

1 dl naturell grekisk yoghurt

1 blodapelsin, zest

2-3 msk färskpressad blodapelsinjuice

0,5 tsk vaniljextrakt

1 3/4 dl vetemjöl

1 tsk bakpulver

en nypa salt


Glasyr:

florsocker

färskpressad blodapelsinjuice


Värm ugnen till 175 grader C. Smör och mjöla en liten kakform. Smält smöret och kokosnötoljan. Tillsätt sockret och rör om. Tillsätt sedan ägget och rör om. Tillsätt yoghurt, apelsinskal, apelsinjuice, vanilj och de torra ingredienserna. Blanda till allt är slät. Häll smeten i formen och baka i 20-25 minuter. Låt kakan svalna i formen, ta sedan bort den och lägg den på en tallrik. Blanda florsocker och blodapelsinjuice i en skål tills det är jämnt. Häll glasyren över kakan när den har svalnat.
