Have you ever eaten cauliflower rice? I think it is delicious and goes well as an alternative to rice. Here I made a dish with the rice and oven roasted beetroot. It was good I can promise! I topped it all with coconut yoghurt, but I can imagine that feta cheese or chèvre is perfect too.
Blomkålsris med Rödbeta
1 liten lök, finhackad
5 dl blomkålsris
2 ugnsbakade rödbetor, mosade grovt
grönsaksbuljong
salt
svartpeppar
Värm en stekpanna och stek löken en stund. Tillsätt blomkålsris, rödbetor och lite buljong och stek i 10 minuter. Krydda med salt och peppar. Servera med kokosyoghurt och persilja.

2 baked beetroots, mashed coarsely
