These buns are so white that I almost become allergic to them :) I mean, of course I'm not really allergic, but more that I don't like or avoid white bread :) But these are gluten free and I have made my own mix of flours. The buns turned out fluffy and they were the following day still really soft and fresh.
Gluten-Free Bread
8 small
4 dl gluten-free flour mix*
1 tsp dry yeast
1 tsp salt
1 tbsp oil
1.5 dl water (42 C degrees)
Mix all the ingredients in a bowl with a spoon. Shape into
balls and put on a baking sheet lined with parchment paper. Let rise for 30
minutes. Sprinkle the buns with some water and top with pumpkin seeds. Bake at
175 C degrees for about 10 minutes. Let cool.

5 dl brown rice flour
1 1/4 dl potato flour
3 tbsp tapioca starch
3 tbsp coconut flour
1.5 tsp xanthan gum
Glutenfria Bröd
8 små
4 dl glutenfri mjölmix *
1 tsk torrjäst
1 tsk salt
1 msk olja
1,5 dl vatten (42 C grader)
Blanda alla ingredienser i en skål med en sked. Forma till
bollar och lägg på en plåt klädd med bakplåtspapper. Låt jäsa i 30 minuter.
Strö över lite vatten och toppa med pumpafrön. Grädda i 175 C grader i ca 10
minuter. Låt svalna.

3 msk tapiokastärkelse
3 msk kokosmjöl
1,5 tsk xanthangummi
1,5 tsk xanthangummi
