I have lately baked with flaxseed eggs and I think it works really well. These muffins were so yummy, sticky and with a lovely chocolate and peanut butter taste. The funny thing is when you bake something and the end result will be so much better than you had imagined.
Kladdiga Chokladmuffins
6 st
1 linfrö-ägg (1 msk malda linfrön + 2,5 msk vatten, ställ i kylen för 15 minuter)
0,5 dl kokosolja, flytande
3/4 dl kokossocker
2 dl mandelmjöl
1 msk kakao
1 tsk bakpulver
1 msk mandelmjölk eller vatten
chokladbitar
jordnötssmör
Blanda linfrö-ägg, kokosolja, kokossocker, mandelmjöl, kakao, bakpulver och mjölk i en skål. Fördela smeten mellan muffinsformarna och toppa
med chokladbitar/jordnötssmör. Grädda i 175 C ca 15 minuter.
Sticky Chocolate Muffins
6 pcs
1 flax egg (1 tbsp ground flaxseed + 2,5 tbsp water, put in the fridge for 15 minutes)
0,5 dl coconut oil, liquid (1/4 cup)
3/4 dl coconut sugar (1/3 cup)
2 dl almond flour (3/4 cup + 1 tbsp)
1 tbsp cocoa powder
1 tsp baking powder
1 tbsp almond milk or water
chocolate chips
peanut butter
Mix flaxseed egg, coconut oil, coconut sugar, almond flour, cocoa, baking powder and milk in a bowl. Divide the batter between the muffin cups and top with chocolate chips/peanut butter. Bake at 175 C for about 15 minutes.

These choc muffins sound so delicious with peanut butter in it. Must be very yummy too!
