A fresh cake with a taste of lemon and a crumb that makes all cakes so much tastier! Do you like crumb topping? The cake is good to eat warm or cold. Maybe with some vanilla ice cream!
Lemon Crumb Cake
Cake:
45 g butter, softened
0.5 dl granulated sugar
1 large egg
1.5 dl all-purpose flour
1/4 tsp baking powder
1/8 tsp baking soda
one pinch of salt
0.5 tsp vanilla extract
1 tbsp fresh lemon juice
2 tbsp (butter)milk
Filling:
100 g vanilla quark
2 tbsp granulated sugar
0.5 egg
0.5 lemon, zested
Streusel:
20 g butter
0.5 dl all-purpose flour
2 tbsp light brown sugar, packed
one pinch of salt
For the cake, line a springform pan with parchment paper. In a bowl, mix butter and sugar. Add the egg and stir well. Add the flour, baking powder, baking soda, salt, vanilla extract, lemon juice and milk. Stir until smooth. Pour the batter into the prepared pan.
For the filling, stir together quark, sugar, egg and lemon zest. Pour over the cake layer, being careful to not let it touch the sides of the pan.
Streusel: stir together all the ingredients. Sprinkle over top of cake. Bake in a175 C degree oven for about 30 minutes. Let cool completely in the springform pan.
Citronsmulkaka
Kaka:
45 g smör, mjukat
0,5 dl strösocker
1 stort ägg
1,5 dl vetemjöl
1/4 tsk bakpulver
1/8 tsk bikarbonat
en nypa salt
0,5 tsk vaniljextrakt
1 msk färsk citronsaft
2 msk (kärn)mjölk
Fyllning:
100 g vaniljkvarg
2 msk strösocker
0,5 ägg
0,5 citron, skal
Smuldeg:
20 g smör
0,5 dl vetemjöl
2 msk ljust farinsocker
en nypa salt
Klä en springform med bakplåtspapper. Blanda smör och socker i en skål. Tillsätt ägget och rör om väl. Tillsätt mjöl, bakpulver, bikarbonat, salt, vaniljextrakt, citronsaft och mjölk. Rör tills det är slät. Häll smeten i bakformen.
Till fyllningen, rör ihop kvarg, socker, ägg och citronskal. Häll över kaksmeten, var noga med att det inte rör vid sidorna av formen.
Smul: rör ihop alla ingredienser. Strö över kakan. Grädda i 175 graders ugn i ca 30 minuter. Låt svalna helt i formen.
