Oh, these cookies are so crispy and good. The cornflakes really give them a crunchiness and at every bite you can feel it. Yum! I also added raspberry chocolate to the batter and that was perfect. Have you tasted Marabous's new raspberry chocolate? I thought it was so, so, too sweet and I would have wanted some tartness from the freeze-dried raspberries. But, you can always bake with the chocolate :)
Berry Cornflakes Chocolate Cookies
50 g butter, room temperature
0.5 dl caster sugar
0.5 dl brown sugar
0.5 egg, room temperature
0.5 tsp vanilla extract
1.5 dl wheat flour
0.5 tsp baking powder
pinch of salt
20 g red berries cornflakes, crushed
35 g Marabou raspberry chocolate, chopped
Preheat the oven to 175 C. In a bowl, add butter and sugars and beat until creamy. Add egg and vanilla extract and mix until combined. Then add flour, baking powder and salt. Crush the cornflakes using your hands until they are broken into smaller pieces. Then add them and the chocolate to the mixture and mix until combined. Refrigerate the dough for 30 minutes. Line a baking tray with parchment paper. Roll the cookie dough into balls using your hands, ensuring there is enough room for the cookies to flatten out in the oven. Bake the cookies for approximately 10 minutes or until golden brown on the edges. Leave to cool completely.
Bär Cornflakes Chokladcookies
50 g smör, rumstemperatur
0,5 dl strösocker
0,5 dl farinsocker
0,5 ägg, rumstemperatur
0,5 tsk vaniljextrakt
1 1/4 dl vetemjöl
0,5 tsk bakpulver
en nypa salt
20 g röda bär cornflakes, krossade
35 g Marabou hallon choklad, hackad
Värm ugnen till 175 C. I en skål, blanda smör och socker och tills krämigt. Tillsätt ägg och vaniljextrakt och blanda. Tillsätt sedan mjöl, bakpulver och salt. Krossa cornflakes med dina händer tills de är brutna i mindre bitar. Lägg sedan till dem och chokladen till blandningen och rör ihop. Kyl degen i 30 minuter. Klä en bakplåt med bakplåtspapper. Forma degen till bollar med händerna och se till att det finns tillräckligt med utrymme mellan kexen. Baka kexen i ca 10 minuter eller tills de är guldbruna på kanterna. Låt svalna helt.
