Since I first made food with jackfruit I am hooked. It's so fun to cook with it and jackfruit does not taste much, but you get the taste by using spices. I got the idea of making stroganoff with it and I can say it was really good. We ate it with boiled rice and salad.
Jackfruit Stroganoff
2 portioner
1 röd lök, hackad
545 g jackfruit, sköljd
2 msk barbecuesås / tomatpuré
2 tsk senap
1 msk saltgurka, hackad
2 dl grönsaksbuljong
1,5 dl matlagningsgrädde
salt
svartpeppar
paprika
Värm olja i en stekpanna och fräs löken en stund. Tillsätt jackfruit och stek i 5 minuter. Tillsätt barbecuesås, senap, saltgurka, buljong och låt småkoka i 20 minuter. Häll i matlagningsgrädde och krydda med salt, svartpeppar och paprika. Låt såsen koka ihop. Servera med kokt quinoa eller ris.

545 g jackfruit, rinsed
2 tbsp barbecue sauce / tomato paste
2 tsp mustard
1 tbsp pickled cucumber, chopped
2 dl vegetable broth
1.5 dl cooking cream
salt
black pepper

Heat the oil in a frying pan and cut the onion for a while. Add jackfruit and fry for 5 minutes. Add barbecue sauce, mustard, 1 pickled cucumber, broth and let simmer for 20 minutes. Pour in the cooking cream and season with salt, black pepper and paprika. Let the sauce cook together. Serve with boiled quinoa or rice.
