These little treats are reminiscent of scones, but are more fluffy and stay good for a few days. They contain buttermilk, which makes them moist. I served jam, whipped cream and cream cheese with mine. So good!
Buttermilk Biscuits
10 small ones
120 g (2- 2 1/4 dl) whole wheat flour
1 tsp coconut sugar
1.5 tsp baking powder
1/4 tsp salt
40 g cold butter
1 1/4 dl buttermilk, cold
In a bowl combine the flour, sugar, baking powder and salt. Using your fingertips cut the butter into the flour mixture until it resembles coarse meal. Stir in the buttermilk until just combined. Put the dough onto a floured surface and gently pat the dough out into a 2 cm thick rectangle. Use a metal biscuit cutter to make biscuits. Place the biscuits on a baking sheet. Bake them at 200 C for 10-12 minutes.
Kärnmjölkskakor (typ scones)
10 st små
120 g (2-2 1/4 dl) fullkornsmjöl
1 tsk kokossocker
1,5 tsk bakpulver
1/4 tsk salt
40 g kallt smör
1 1/4 dl kärnmjölk, kall
I en skål blanda mjöl, socker, bakpulver och salt. Med fingertopparna nyp smöret i mjölblandningen tills det liknar grovt mjöl. Blanda in kärnmjölken. Lägg degen på en mjölad yta och klappa degen till ca 2 cm tjock rektangel. Använd en kakform för att göra kakor. Placera kakorna på ett bakplåt. Baka dem i 200 C i 10-12 minuter.
