Here is another twist on the Runeberg's cake in the form of Runeberg's cookies. Very delicious and they taste exactly like Runeberg's cakes. Yum!
Runebergssnitt
50 gram smör, mjukt
0,5 dl socker (sukrin)
0,5 msk (dadel) sirap
1,25 dl mjöl
0,5 tsk bakpulver
1/4 tsk kardemumma
1/8 tsk mandelessans
fast hallonsylt
florsocker
vatten
Sätt ugnen på 175 grader C. Blanda smör, socker och sirap. Tillsätt resterande ingredienser och blanda till en jämn deg. Gör en rulle av degen och lägg den på en plåt med bakplåtspapper. Platta till den en aning och gör en fördjupning i mitten av degen som du fyller med hallonsylt. Grädda mitt i ugnen i ca 12 minuter. Ta ut plåten och låt svalna någon minut. Blanda florsocker och vatten till en glasyr och lägg på hallonsylten. Skär sedan i bitar.
Runeberg's Cookies
50 g butter, soft
0.5 dl sugar (sukrin)
0.5 tbsp (date) syrup
1.25 dl flour
0.5 tsp baking powder
1/4 tsp cardamom
1/8 tsp almond essence
raspberry jam
icing sugar
water
Heat the oven to 175 degrees C. Mix the butter, sugar and syrup. Add the remaining ingredients and mix to a smooth batter. Shape into a roll and place it on a baking sheet lined with parchment paper. Flatten the roll slightly and make a dwell in the middle of the batter. Fill the dwell with raspberry jam. Bake in the middle of the oven for about 12 minutes. Remove from the oven and allow to cool for a few minutes. Stir together icing sugar and water to a glaze. Add the glaze yo the cookies. Then cut into pieces.
