Soft cookies with the taste of peanut butter and the coffee is not so bad :) And if you take a cup of coffee with them you have the perfect coffee break. If you want more crunchy cookies you could extend the baking time.
Peanut Butter Espresso Cookies
15 small cookies
0.5 tbsp ground flaxseeds
1.5 tbsp water
1 dl crunchy peanut butter
1 dl coconut sugar
1.5 tsp finely ground espresso
0.5 tsp baking powder
pinch of salt
Preheat the oven to 175° C degrees. Line a baking sheet with parchment paper.
In a bowl mix ground flaxseeds with water, let sit for 5 minutes. Add peanut butter, sugar, espresso, baking powder and salt and mix until combined. Roll dough into small balls and flatten them slightly. Bake them for 5-6 minutes. Let cool.
