I ordered a bag of erythritol from iHerb and the first thing I baked with the sweetener is this chocolate cake. The consistency of the cake is a little brownie-like, yet light and airy. When I ate the cake it left a kind of cold feeling in your mouth, it felt different and a little weird. But anyway it was good and I will continue experimenting with erythritol. Have you baked with erythritol and have you experienced the same cold feeling in your mouth?
Chocolate Cake
2.5 tbsp butter
2 tbsp coconut oil
1 egg
1 dl almond flour
1 dl erythritol
1 tbsp cocoa powder
3/4 tsp baking powder
0.5 tsp vanilla extract
0.5 tsp instant coffee
Preheat the oven to 175 C. Stir butter, erythritol, and coconut oil together. Add the egg and stir. Add the rest of the ingredients and mix thoroughly. Divide the batter between three silicon molds (7cm in diameter). Bake in the oven for 15-20 minutes. Let cool before serving.
Chokladkaka
2,5 msk smör
2 msk kokosolja
1 ägg
1 dl mandelmjöl
1 dl erytritol
1 msk kakaopulver
3/4 tsk bakpulver
0,5 tsk vaniljextrakt
0,5 tsk snabbkaffe
Värm ugnen till 175 C. Rör smör, erytritol, och kokosolja tillsammans. Tillsätt ägget och rör om. Tillsätt resten av ingredienserna och blanda väl. Dela smeten mellan tre silikonformar (7cm i diameter). Grädda i ugnen i 15-20 minuter. Låt svalna innan servering.
