This cake I baked for a friend who was celebrating her colleague. The wish was an egg-free cake flavored with tea, strawberries and milk. You can buy different kind of flavored teas in the shops here and one of them is precisely strawberry milk tea. To make the cake base vegan, you replace the milk with a milk free liquid. I filled the cake with strawberry mousse and strawberry pieces and decorated it with a whipped cream cheese frosting and fresh strawberries. The cake was much appreciated and was moist and not too sweet.
Äggfri Tårtbotten
50 g margarin, smält
2,5 dl jordgubbs-mjölkte
2 tsk vinäger
4,5 dl mjöl
2.5 dl strösocker
1 msk bakpulver
Sätt ugnen på 175°C. Klä en springform, 20-22 cm, i bakplåtspapper. Blanda mjölkte och vinäger. Blanda de torra ingredienserna och tillsätt sedan det smälta smöret och mjölkte. Vispa smeten tills allt är blandat. Grädda i nedre delen av ugnen i ca 30-40 minuter beroende på formens storlek.
Jordgubbsfyllning
(2 lager i en tårta på 22cm)
250 g jordgubbar
2 dl vispgrädde
100 g färskost
ca. 0.5 dl vaniljkrämspulver
1 msk florsocker
Mixa jordgubbarna med stavmixer. Vispa grädden och blanda sedan resterande ingredienser. Låt stå en stund i kylskåp innan användning.
Färskostfrosting
3 dl grädde
en nypa bakpulver
250 g philadelphiaost
2 dl florsocker
I en skål vispa grädde med bakpulver hårt. I en annan skål, blanda ihop philadelphiaost med florsocker. Tillsätt oströran i vispgrädden och vispa en stund tills allt blandats. Spritsa frostingen på bakverk eller använd som fyllning i tårta.
Eggless cake base
50 g of margarine, melted
2.5 dl strawberry milk tea
2 tsp vinegar
4.5 dl flour
2.5 dl granulated sugar
1 tbsp baking powder
Preheat the oven to 175 ° C. Line a springform, 20-22 cm, with parchment paper. Mix the milk tea and vinegar. Mix the dry ingredients and then add the melted butter and milk tea. Beat the batter until well blended. Bake in the lower part of the oven for about 30-40 minutes depending on the size of your cake tin.
Strawberry Filling
(2 layers in a cake on 22cm)
250 g strawberries
2 dl whipping cream
100g cream cheese
ca. 0.5 dl custard powder
1 tbsp icing sugar
Mix the strawberries with a hand blender. Whip the cream and then mix in the remaining ingredients. Let stand for a while in the fridge before using.
Whipped cream cheese frosting
3 dl cream
a pinch of baking powder
250 g cream cheese (Philadelphia)
2 dl powdered sugar
In a bowl whisk the cream with baking powder stiff. In another bowl, mix together the cream cheese with the icing sugar. Add the cheese mixture into the whipped cream and whisk until blended. Pipe frosting on cakes or use as a filling in cakes.
