Jag fyllde och dekorerade tårtan med "smörkräm" och mandarinbitar. Tårtan fick högsta betyg av födelsedagsbarnet och gästerna.
I was given the mandate to bake a gluten-free and dairy-free cake. Earlier I had seen in my instagram feed a gluten-free cake base that looked promising, I decided to try the recipe. The recipe is from Nadia, who have the blog Nadia's Healthy Kitchen. I test baked the cake and I was very pleased. It tastes good, it's moist and has a texture reminiscent of ordinary cake base, and quite honestly, you don't notice that it's gluten-free. I think even that this cake base is tastier. I chose not to use cardamom and ginger, as in the original recipe. I wanted a cake base with the taste of orange.
I filled and decorated the cake with "buttercream" and tangerine pieces. The cake received the highest rating of the birthday child and guests.
Gluten Free and Dairy Free Orange Cake
4 dl ground almonds
3/4 dl coconut flour
2 tsp baking powder
1 dl coconut sugar
5 eggs
1 dl coconut oil, melted
0,5 tsp vanilla paste (or 1 tsp vanilla extract)
zest of 1 orange
2 tbsp fresh orange juice
Preheat your oven to 180 C or 160 C (fan assisted). Line a
24 cm round cake tin with parchment paper. In a large bowl, mix all the dry
ingredients together.
In another bowl, beat together the eggs then add in the
melted coconut oil, vanilla, orange zest and juice. Add this to the dry
ingredients and mix until well combined.
Put the batter in the cake tin and press down using the back
of a spoon to make sure it’s even. Bake for 30-40 minutes. Remove from the oven
and leave to cool completely. Bake the cake the day before so there’s plenty of
time for the cake to cool down but also to allow the flavours to mingle
together. You can eat the cake as it is or divide the cake into two parts and
fill with your choice of filling and frosting.
Gluten- och mjölkfri Apelsintårta
4 dl mandelmjöl
3/4 dl kokosmjöl
2 tsk bakpulver
1 dl kokossocker
5 ägg
1 dl kokosolja, smält
0,5 tsk vaniljpasta (eller 1 tsk vaniljextrakt)
skal av 1 apelsin
2 msk färsk apelsinjuice
Värm ugnen till 180 C eller 160 C (fläkt). Klä en 24 cm rund
kakform med bakplåtspapper. I en stor skål, blanda alla torra ingredienser
tillsammans.
I en annan skål, vispa ihop äggen och blanda sedan i smält
kokosolja, vanilj, apelsinskal och saft. Häll ägg-blandningen till de torra
ingredienserna och blanda tills väl kombinerat. Häll smeten i kakformen och med
baksidan av en sked se till att smeten är jämn. Grädda i 30-40 minuter. Ta ut
ur ugnen och låt svalna helt. Baka tårtan gärna dagen innan så det finns gott
om tid för kakan att svalna och också för att låta smakerna fördjupas. Du kan
äta kakan som den är eller dela kakan i två delar och fylla med ditt val av
fyllning och frosting.

DeleteMen, hur fint har du inte gjort denna tårtan! Inte konstigt att födelsedagsbarnet var tacksam:) Apelsinsmak gillar vi när det är lite mäktigare bakverk, typ tårtor. Det ger en fräschare och lättare känsla.
