Walking round in supermarkets here in Singapore is pure joy. Lots of fresh vegetables and fruits, and much that you never heard of. Okra or ladyfingers as they are also called, I have never cook myself, until now :) Okra is rich in vitamin C, folate, fiber and antioxidants. It also contains calcium and potassium. I read online that the vegetables have a tendency to become slimy when cooked, but by frying / cooking them for at least 10 minutes reduces this. My okra was very good and did not become slimy at all. I think the taste and texture of okra is reminiscent of green beans.
Okra with Onion and Tomato
500 g okra
2 tbsp coconut oil
0,5 tsp cumin seeds
1 red onion, chopped
2 tomatoes, chopped
sambal chilli, after taste
0,5 dl water
salt
Wash okra and pat them dry. Chop off the head and then slice
the okra into pieces. Heat a large wok or frying pan over a medium heat. Add
the oil, then the cumin seeds. Fry for a while and then add the onion, cooking
until soft. Stir in the okra, the tomatoes and chilli. Mix well and keep
stirring gently, taking care not to break up the okra. Cook for about 10
minutes and then lower heat, and cook for another 5 minutes. Add the water,
cover and let simmer for another 5 minutes. Season with salt. Serve with rice,

Okra med Lök och Tomat
500 g okra
2 msk kokosolja
0,5 tsk kumminfrön
1 rödlök, hackad
2 tomater, hackade
sambal chili, efter smak
0,5 dl vatten
salt
Tvätta okra och klappa dem torra. Skär av toppen och skär sedan
okra i bitar.
Hetta upp en stor wok eller stekpanna på medelvärme.
Tillsätt olja, sedan kummin. Fräs en stund och tillsätt sedan lök, stek tills
den är mjuk. Rör i okra, tomater och chili. Stek i ca 10 minuter och sänk sedan
värmen, och stek i ytterligare 5 minuter. Tillsätt vatten, täck över och låt
sjuda i ytterligare 5 minuter. Smaka av med salt. Servera med ris, roti...

here in Greece okra is a very popular vegetable! We cook them with tomato sauce and those who eat meat add chicken as well. Yours look delicious!
