En knaprig skorpa och mjuk inuti är var du får i denna 4-h baguette! Ja, alltså det tar fyra timmar att baka brödet från start tills färdigt. Men det mesta är jäsningstid. Mycket god baguette.

4-h Baguette

3,5 dl vatten, 46 grader
1 tsk torrjäst
7,5-8 dl mjöl (rye, whole wheat)
1,5 tsk salt

Blanda vatten och jäst och låt stå 10 minuter. Blanda i mjölet med en gaffel till en smidig deg. Låt stå 20 minuter. Blanda i saltet och knåda degen 10 minuter. Täck degen och låt jäsa 45 minuter.
Ta degen på ett mjölat bakbord och tryck ut till en rektangel, vik sedan in ena långsidan mot mitten och sedan kortsidan mot mitten. Låt jäsa ytterligare 1 h, övertäckt. Dela degen i 3 bitar och rulla bitarna till 35 cm långa band. Låt jäsa övertäckta i 50 minuter.

Ställ in en stenplatta i ugnen och värm ugnen till 240 grader. När baguetterna jäst klart, skär med en vass kniv fyra snitt i varje baguette. Placera bröden på stenplattan och lägg några isbitar på en plåt som står i nedre delen av ugnen (detta ger ånga och låter baguetterna stiga innan en skorpa bildas) Grädda baguetterna ca 20-30 minuter.

 


4-h Baguette

3,5 dl water, 46 degrees
1 tsp dry yeast
7,5-8 dl flour (rye, whole wheat)
1,5 tsp salt

Mix water and yeast and let stand 10 minutes. Mix in the flour with a fork to a smooth dough. Let stand 20 minutes. Mix in salt and knead the dough for 10 minutes. Cover dough and let rise 45 minutes.
Take the dough on a floured surface and press out into a rectangle, then fold into the long side toward the middle and then the short edge toward the center. Let rise for another 1 hour, covered. Divide dough into 3 pieces and roll the pieces into 35 cm long ropes. Let rise covered for 50 minutes.

Put a stone plate in the oven and preheat oven to 240 degrees. Cut the baguettes with a sharp knife, four cuts in each baguette. Place the baguettes on the stone plate and add some ice cubes on a baking sheet that is in the bottom of the oven (this produces steam and lets the loaves rise fully before a crust forms). Bake baguettes for about 20-30 minutes.
