En våraktig paj, passande till påsk, med en frisk, sötsyrlig smak av citron och passionsfrukt. Pajen blir mitt bidrag till Kokboksutmaningen denna månad: exotiska frukter. 

A spring-like tart, suitable for Easter, with a fresh sweet tangy taste of lemon and passion fruit. This is my contribution to the Cook Book Challenge for this month: exotic fruits.


Citron & Passionsfruktpaj

pajbotten
200 g vetemjöl
nypa salt
115 g osaltat smör, kylt och tärnat
25 g florsocker
1 äggula blandad med
2 msk iskallt vatten

fyllning
4 passionsfrukter
juice och fint rivet skal av 1 citron
150 ml vispgrädde
4 msk crème fraiche
85 g strösocker
2 ägg
2 äggulor

För degen, sikta mjöl och salt i en skål. Gnid i smöret tills blandningen liknar fina brödsmulor. Rör i florsockret och äggulan och blanda till en deg.  På mjölat bakbord knåda degen lätt tills slät. Plasta in i plastfolie och kyl i 20 minuter. Kavla ut degen på ett mjölat bakbord, till storleken av en 23 cm räffled form. Kyl för 20 minuter. Värm ugnen till 200. Nagga botten med en gaffel och lägg bakplåtspapper på bottnet och fyll med bakbönor. Grädda i ugnen i 10 minuter. Ta bort papperet och bönorna och returnera till ugnen i 5 minuter. Minska ugnstemperaturen till 180.

Till fyllningen: halvera passionsfrukt och gröp ur fröna och köttet i en fin hålförsedd sil satt över en kanna. Tryck med baksidan av en sked tills du har ca 75 ml juice.

I en skål vispa ihop passionsfrukt juice, citronskal och saft, grädde, crème fraiche, socker, ägg, äggula tills slät. Häll i pajskalet. Grädda i 30-35 minuter tills fyllningen har nästan stelnat. Låt svalna helt. Servera med passionfruktsfrön och crème fraiche.


Lemon & Passion Fruit Tart

Pastry
200 g plain flour
pinch of salt
115 g unsalted butter, chilled and diced
25 g icing sugar
1 egg yolk blended with
2 tbsp ice-cold water

Filling
4 passion fruit
juice and finely grated rind of 1 lemon
150 ml double cream
4 tbsp crème fraiche
85 g caster sugar
2 eggs
2 egg yolks

For the pastry, sift the flour and salt into a bowl. Rub in the butter until the mixture resembles fine breadcrumbs. Stir in the icing sugar and blended egg yolk and mix to a dough. Turn onto floured surface and knead lightly until smooth. Wrap in clingfilm and chill in the fridge for 20 minutes. Roll out the pastry on a floured surface and use to line a 23 cm fluted flan tin. Chill for 20 minutes. Preheat the oven to 200. Prick the pastry base all over with a fork and line with baking paper and fill with baking beans. Bake in the oven for 10 minutes. Remove the paper and beans and return to the oven for 5 minutes. Reduce the oven temperature to 180.

For the filling, halve the passion fruit and scoop out the seeds and flesh into a fine-holed sieve set over a jug. Reserve the seeds and pulp. Press with the back of a spoon until you have about 75 ml juice.

In a bowl whisk together the passion fruit juice, lemon rind and juice, cream, crème fraiche, sugar, eggs, egg yolk until smooth. Pour into the pastry case. Bake for 30-35 minutes until the filling is just set. Leave to cool completely. Serve with passion fruit seeds and crème fraiche.
