Pretzel / Salt Kringla

1,8 dl vatten
0,5 msk socker
1 tsk torrjäst
3,5-4 dl mjöl
1 tsk salt
1 msk smält smör

1,2 l vatten
0,5 dl bakpulver

0,5 ägg +  0,5 tsk vatten
flingsalt

I en skål kombinera varmt vatten, socker och torrjäst. Låt stå 5 minuter. I en annan skål, blanda mjöl och salt. När jästblandningen börjat skumma, tillsätt smält smör och mjölblandningen. Med hjälp av en träslev, börja blanda degen tills allt blandats. Lägg degen på en lätt mjölat bakbord och knåda i ca 5 minuter, tillsätt mjöl om det behövs för att få en smidig boll av degen. Placera bollen av degen i en oljad skål, täck med plastfolie och låt jäsa på en varm plats i en timme.

När degen har jäst, klä en plåt med bakplåtspapper och olja den lätt. Dela degen i 6 lika stora bitar. Rulla varje bit av degen till ett 30-40 cm rep. Gör u-form med repet och korsa ändarna över varandra och fäst ändarna I nedre delen av U. Placera pretzel på plåten och ställ i kylskåp i en timme.

Sätt ugnen på 225C. Koka upp 1,2 l vatten. När vattnet kokar, tillsätt bakpulver, mycket försiktigt, lite i taget, eftersom det lätt kokar över. Placera pretzel i kokande vatten, en i taget, för 30 sekunder. Ta bort ur vattnet och lägg tillbaka på bakplåtspapper. Pensla pretzel med ägg-vattenblandning, strö över salt och grädda i ugnen i ca 12 minuter.


Pretzel

1,8 dl water
0,5 tbsp sugar
1 tsp dry yeast
3,5-4 dl flour

1 tbap melted butter

1,2 l water
0,5 dl baking powder

0,5 egg +  0,5 tsp water
sea salt

In a bowl combine warm water, sugar and dry yeast. Allow to sit 5 minutes. In a another bowl, mix the flour and salt. Once the yeast mixture starts to foam, add the melted butter and the flour mixture. Using a wooden spoon, start mixing the dough until it comes together. Place the dough onto a lightly floured surface and knead for about 5 minutes, adding flour as necessary to obtain a smooth ball of dough. Place the ball of dough in a oiled bowl, cover with plastic wrap and leave to rise in a warm place for one hour.

Once your dough has risen, line a baking sheet with parchment paper and oil it lightly. Divide the dough into 6 equal pieces. Roll each piece of dough into a 30-40 cm rope. Make a U shape with the rope, holding the ends of the rope, cross them over each other and press onto the bottom of the U. Place the pretzels on a baking sheet and refrigerate for one hour.

Preheat the oven to 225C. Bring 1,2 l of water to a boil. Once the water is boiling, add the baking soda, very carefully, a little bit at a time, as it will cause the water to boil over. Place the pretzels in the boiling water, one at a time, 30 seconds each. Remove the pretzels from the water and place them back on the parchment lined baking sheet. Brush the top of each pretzel with the egg wash, sprinkle with salt and bake in the oven for about 12 minutes.
