Glad påsk! Här får ni ett recept på en lite lyxigare tårta med smak av päron och mandel.
Happy Easter! Here you have a recipe for a luxurious cake with hints of pear and almond.


Almond Frangipane with Poached Pears
Adapted from Chef Matthew McCool of Aria Restaurant, China World Hotel, Beijing

Pastry
500 g flour
100 g icing sugar
250 g butter, cold
1 lemon, zest
2 large eggs
a splash of milk

Poached Pears
3 ripe medium pears  
3 cups water
1 cup sugar
2 tbsp lemon juice
1 cinnamon stick
1 tsp vanilla extract
1/8 tsp salt

Frangipane
6 tbsp butter, room temperature
2/3 cup sugar
3/4 cup ground blanched almonds
2 tsp flour
1 tsp cornstarch
1 large egg plus 1 egg white
1 tsp vanilla extract
2 tsp almond extract

For the pears: Combine the water, sugar, lemon juice, cinnamon stick, vanilla, and salt in a saucepan large enough to hold all the pears and bring to a simmer over medium-high heat. Meanwhile, cut the pears in half, remove the seed core and fibrous cores at either end, then peel the pears.
Add the pear halves to the simmering syrup and reduce heat to low. Cover, and let pears poach for about 10 minutes, turning them halfway. The pears will become slightly translucent, very tender, and easily pierced with a knife or skewer.
Let the pears cool in the liquid until room temperature before using. Or, you can store them in their liquid in the refrigerator for up to 3 days.

For the pastry: Put the flour, confectioner's sugar, and salt in a bowl. Add the pieces of cold butter and with your hands, work the cubes of butter into the flour and sugar by rubbing your thumbs against your finger until the mixture is at a fine, crumbly consistency. Mix in the lemon zest and add the eggs and milk to the mixture. Don’t work the pastry to much at this stage or it will become elastic and chewy. Pat the pastry into a flat round shape, flour it lightly, wrap it in cling filmand put it into the fridge to rest for at least half an hour.

Place the tart shell on a baking sheet and bake for about 25 minutes, until the shell is dry and lightly colored. If any places have cracked, repair with the extra dough. Let cool on a rack until room temperature.

For the Frangipane: Combine the butter and sugar in the food processor and combine until smooth. Add the ground almonds and blend together. Add the flour and cornstarch, and then the egg and egg white. Process the mixture until it is very smooth. Add in the vanilla and almond extracts just to blend.
The frangipane can be used immediately or you can store it in the refrigerator for up to 2 days. If it becomes too firm in the fridge, let it sit at room temperature for a while to soften before using.

To finish the tart: Preheat the oven to 180 degrees. Spread the frangipane evenly into the cooled tart shell (It should be liquid enough to smooth out on its own).
Take the poached pears out of their liquid and drain them on paper towels. You want them dry or they will make the frangipane soggy. Cut each pear half crosswise into 3/8 in thick slices. Do not separate the pear half yet.
Slide a spatula or other flat utensil underneath the pear so you can transfer the entire half onto the tart. Press on the pear to fan the slices toward the top narrow end of the pear.
Slide the pear half onto the frangipane carefully - you can move the pear after you place it, but not much.
Repeat with the other pear halves until there are four halves on the tart, evenly spaced.
Place the tart on a baking sheet and bake in the oven for about 45-50 minutes, until the frangipane is puffed, golden brown, and firm to the touch. Cool the tart on a wire rack. Serve with a dollop of mascarpone.


Mandel Frangipane med Pocherade Päron

Botten
500 g mjöl
100 g florsocker
250 g smör, kallt
1 citron, rivet skal
2 stora ägg
en skvätt mjölk

Pocherade Päron
3 mogna medelstora päron
3 dl vatten
1 dl socker
2 msk citronsaft
1 kanelstång
1 tsk vaniljextrakt
1/8 tsk salt

Frangipane
6 msk smör, rumstemperatur
2/3 cup socker
3/4 cup mandelmjöl
2 tsk mjöl
1 tsk majsstärkelse
1 stort ägg plus 1 äggvita
1 tsk vaniljextrakt
2 tsk mandel extrakt

För päron: Blanda vatten, socker, citronsaft, kanelstång, vanilj och salt i en kastrull stor nog att rymma alla päron och värm upp på medelhög värme. Under tiden skala, ta bort frön och kärna päronen, skär dem på mitten. Tillsätt päronhalvorna till den sjudande vatten-sockerblandningen och minska värmen till låg. Lägg lock på och låt päron sjuda i ca 10 minuter, vänd dem halvvägs. Päronen blir något genomskinliga, mjuka och lätta att skära i. Låt päronen svalna i vätskan till rumstemperatur innan de används.

För degen: Lägg mjöl, florsocker och salt i en skål. Tillsätt bitar av kallt smör och med fingrarna arbetar du degen till en fin och smulig konsistens. Blanda i citronskal och tillsätt ägg och mjölk till blandningen. Arbeta inte degen för mycket i detta skede eller kommer den att bli elastisk och seg. Platta ut degen i rund form och låt degen vila i kylskåp i minst en halvtimme.
Grädda skalet i ca 25 minuter, tills skalet är torrt och fått lite färg.

För frangipane: Kombinera smör och socker i matberedaren och kombinera tills slät. Lägg I den malda mandeln och blanda. Tillsätt mjöl och majsstärkelse, och sedan ägget och äggvitan. Blanda tills blandningen är mycket smidig. Lägg i vanilj- och mandel extrakt.

Värm ugnen till 180 grader. Häll frangipane jämnt i det kylda. Ta päronen ur vätskan och låt dem rinna av på hushållspapper. Du vill ha dem torra eller annars kommer de att göra frangipanen blöt. Skär varje päronhalva på tvären i 3/8 tjocka skivor och lägg på tartan. Upprepa med den andra päronhalvorna tills det finns fyra halvor på tårtan, jämnt fördelade.
Grädda i ugnen i ca 45-50 minuter, tills frangipanen är gyllenbrun och fast vid beröring. Servera med en klick mascarpone.
