Today is Runeberg's Day in Finland. And there is a pastry eaten in honor of the day, Runeberg's Pastry. It is named after Finland's national poet Johan Ludvig Runeberg, who is said to have eaten such a pastry every day. It is also said that it was his wife Fredrika Runeberg who invented the pastry in the 1850s. It is a very moist and spicy pastry with a flavor of almond, cardamom, gingerbread, arrack or rum. The pastry is topped with raspberry jam and icing. Yum, so good!
