I call these muffins Mazarins because that's what they taste like. The almond paste and almond essence give them an incredibly good taste. And together with the blueberries they are moist and delicious. Today my afternoon coffee will be really enjoyable.
Mazarin-Blåbärsmuffins
5 st
40 g smör, mjukt
40 g mandelmassa, riven
0,5 dl ljust farinsocker
1 litet ägg
3/4 dl vetemjöl
0.5 tsk bakpulver
0,5 tsk vaniljextrakt
1/8 tsk mandelessens

Värm ugnen till 175 C grader. Blanda smör, riven mandelmassa och socker i en skål. Tillsätt ägget och blanda väl. Blanda ner de torra ingredienserna till en jämn och tjock smet. Fyll muffinsformarna med smeten och tryck i några blåbär i varje. Grädda i mitten av ugnen i ca 15 minuter eller tills de fått en gyllenbrun färg. Låt svalna helt.
Mazarin Blueberry Muffins

40 g butter, soft
40 g almond paste, grated
0.5 dl light brown sugar
1 small egg
3/4 dl wheat flour
0.5 tsp baking powder
0.5 tsp vanilla extract
1/8 tsp almond essence
blueberries
Preheat oven to 175 C degrees. Mix butter, grated almond paste and sugar in a bowl. Add the rest of the ingredients and mix until smooth and thick. Fill the muffin tins with the batter, and press a few blueberries in each. Bake in the oven for about 15 minutes or until golden brown. Let cool completely.
