I had sugar substitute at home, erythritol, so I thought I could try baking these muffins with it. I think it turned out very good and I think you don't taste the sugar substitute, because sometimes it has a cold taste. If you don't want to use sugar substitute, you can use coconut sugar or white sugar.
Berry-Almond Muffins
Bär-Mandelmuffins
3 st
45 g smör, smält
1 dl kokossocker eller eritrythol
1 ägg
3/4 dl vetemjöl
1/4 dl mandelmjöl
0,5 tsk bakpulver
1 dl bär, hallon och blåbär
Blanda smör och socker. Blanda i ägget. Tillsätt sedan resterande ingredienser. Häll smeten i 3 större muffinsformar. Grädda i 175 C i 15-20 minuter.

45 g butter, melted
1 dl coconut sugar or erythritol
1 egg
3/4 dl wheat flour
1/4 dl almond flour
0.5 tsp baking powder
berries, raspberries and blueberries
Mix butter and sugar. Mix in the egg. Then add the remaining ingredients. Pour the batter into 3 slightly larger muffin tins. Bake at 175 C for 15-20 minutes.
