I bought rhubarb from Lidl and it tasted so good. That taste reminded me of all the rhubarb dishes from my childhood. So incredibly good! I like rhubarb compote so much that I can eat it with a spoon straight out of the jar :) But remember to have some dairy product on the side, as rhubarb contains oxalic acid. Today's recipe is a yummy breakfast that can be prepared the night before.
Rhubarb Vanilla & Protein Overnight Oats
2 dl oats
2 dl almond milk
2 tbsp rhubarb compote
1 tbsp scoop vanilla protein powder
one pinch of salt
Put all the ingredients in a jar and stir well. Put in the fridge overnight or for a few hours. In the morning stir and add more milk if needed.
Kall Rabarber & Vanilj Proteingröt
2 dl havregryn
2 dl mandelmjölk
2 msk rabarberkompott
1 msk vaniljproteinpulver
en nypa salt
Lägg alla ingredienser i en burk och rör om väl. Ställ i kylen över natten eller i några timmar. På morgonen rör om och tillsätt mer mjölk om det behövs.
