This is a mixture that can be eaten with pasta or, as I did this time, used as a filling in tortilla. Good and simple. I baked my stuffed tortillas in the oven topped with tomato sauce and grated cheese. But you can also eat them without cooking them in the oven.
Spinach Ricotta Mixture
oil
1 small red onion, finely chopped
1 garlic clove, minced
200 g spinach, frozen
200 g ricotta cheese
salt
black pepper
a pinch of nutmeg
Heat oil in a pan and fry the onion and garlic until soft. Add the spinach. Continue to cook on low heat approximately 5 minutes. Add the mixture to the ricotta cheese and mix. Season with salt, pepper and nutmeg.
Spenat Ricottaröra
olja
1 liten rödlök, finhackad
1 vitlöksklyfta, hackad
200 g spenat, frysta
200 g ricottaost
salt
svartpeppar
en nypa muskot
Hetta upp olja i en stekpanna och fräs lök och vitlök tills den är mjuk. Tillsätt spenaten. Fortsätt att steka på låg värme ca 5 minuter. Blanda ner blandningen i ricottaosten. Krydda med salt, peppar och muskot.
