I like the flavors of blueberry and lemon together. In these pies I have used lemon curd and bush blueberries. But if you have wild blueberries, I recommend using them. They are so much tastier and have so much more flavor. Have a nice day!
Paj med Blåbär och Lemoncurd
100 g smör, rumsvarmt
3 dl vetemjöl
3/4 dl socker
1 ägg
0,5 tsk vaniljpulver
en nypa salt
Fyllning:
lemoncurd
blåbär
Nyp ihop smör, vetemjöl, socker, ägg, vaniljpulver och salt till en smidig deg. Låt vila i kylen ca 30 minuter. Blanda vaniljkräm med lemon curd. Kavla ut degen och lägg den i en springform eller i mindre pajformer. Spara lite av degen till topping. Lägg på ett lager av lemoncurd och toppa med blåbär. Smula på lite deg. Grädda i 175 C i ca 25-30 minuter.
Blueberry & Lemon Curd Pie
100 g butter, room temperature
3 dl wheat flour
3/4 dl sugar
1 egg
0.5 tsp vanilla powder
a pinch of salt
Filling:
lemon curd
blueberries
Knead butter, wheat flour, sugar, eggs, vanilla powder and salt into a smooth dough. Leave to rest in the fridge for about 30 minutes. Mix custard with lemon curd. Roll out the dough and place it in a spring form or in smaller pie forms. Save some of the dough for topping. Add a layer of lemon curd and top with blueberries. Crumble on some dough. Bake at 175 C for about 25-30 minutes.
