I'm enjoying rhubarb in large quantities right now. Must take advantage of this time and when I have eaten enough of them I freeze them in pieces and enjoy them even later in the year. Soft and tasty oatmeal cookies with pieces of rhubarb.
Rhubarb Oatmeal Cookies
20 pcs
75 g butter, soft
0.5 dl coconut sugar
1 dl oatmeal
1 dl wheat flour
1/4 tsp baking powder
rhubarb, sliced
cinnamon, optional
Mix butter and sugar. Add the dry ingredients and mix to a batter. Form small balls and place them on a baking sheet lined with parchment paper. Press in a few rhubarb pieces in each. Sprinkle on some cinnamon. Bake at 175 C for about 10 minutes.
Rabarber Havrekex
20 st
75 g smör, mjukt
0,5 dl kokosocker
1 dl havregryn
1 dl vetemjöl
1/4 tsk bakpulver
rabarber, skivad
kanel, valbart
Blanda smör och socker. Tillsätt de torra ingredienserna och blanda till en smet. Forma små bollar och lägg dem på en plåt. Tryck i några rabarberbitar i varje. Strö på lite kanel. Grädda i 175 C i ca 10 minuter.
