If you have mashed potatoes left-over, make mashed potato pancakes! Usually I make flatbread or bread when I have left-over mashed potatoes, but now I wanted to try something new and made pancakes. Really delicious! Serve with lingonberry jam, coleslaw or grated carrots.

1,5-2 dl potatismos
1 litet ägg
0,5 dl mjölk
2 tsk psyllium eller vetemjöl / havremjöl
salt
Blanda potatismos med ägget, mjölken, psyllium och salt. Låt stå i 10 minuter. Värm en stekpanna med smör och stek små plättar till de är gyllenbruna på båda sidor. Servera med lingonsylt, coleslaw eller rivna morötter.
Potato Mash Pancakes

1.5-2 dl mashed potatoes
1 small egg
0,5 dl mjölk
2 tsp psyllium or wheat flour / oat flour
salt
Mix mashed potatoes with the egg, milk, psyllium and salt. Let sit for 10 minutes. Heat a frying pan with butter and fry small pancakes until golden brown on both sides. Serve with lingonberry jam, coleslaw or grated carrots.
