Madeira cake is a big favorite and I thought why not bake the cake as muffins. They were successful and the consistency of madeira cake / muffins is what I like most about these and of course they are very good too :)
Sandkakamuffins
5 st
65 g smör
3/4 dl potatismjöl
1/4 tsk bakpulver
1 ägg
3/4 dl socker
1 tsk lime zest och saft
Rör smör, potatismjöl och bakpulver till en porös smet. Vispa ägg och socker fluffigt. Blanda ner potatismjöl-blandningen och lime. Häll smeten i små silikonmuffinsformar och grädda i 175 C grader i cirka 15 minuter.
Madeira Muffins
5 pcs
65 g butter
3/4 dl potato flour
1/4 tsp baking powder
1 egg
3/4 dl coconut sugar
1 tsk lime zest and juice
Stir butter, potato flour and baking powder into a porous batter. Whisk eggs and sugar fluffy. Mix in the potato flour mixture and lime. Pour the batter into small silicone muffins cups and bake them at 175 C degrees for about 15 minutes.

De ser jättegoda ut, måste prova. Bra med ett lite mindre recept också, frysen blir snabbt full annars. /Pia
