Madeira cake is a great favorite from childhood. Have you grown up with this cake? The cake has a smooth and different texture than other coffee cakes, which it gets from the potato flour. This cake is gluten-free, but there are recipes for the cake with wheat flour in it as well. Incredibly good, so feel free to try if you have never done it.
Sandkaka
65 g smör
3/4 dl potatismjöl
1/4 tsk bakpulver
1 ägg
3/4 dl socker
1 tsk romessans
Rör smör, potatismjöl och bakpulver till en porös smet. Vispa ägg och socker fluffigt. Blanda ner potatismjöl-blandningen och rom. Häll smeten i en väl smord och mjölad kakform och grädda kakan i 175 C grader i cirka 45 minuter.
Madeira Cake
65 g butter
3/4 dl potato flour
1/4 tsp baking powder
1 egg
3/4 dl coconut sugar
1 tsp rum essence
Stir butter, potato flour and baking powder into a porous batter. Whisk eggs and sugar fluffily. Mix in the potato flour mixture and rum. Pour the batter into a well-greased and floured cake tin and bake the cake at 175 C degrees for about 45 minutes.

Oj, nostalgikick. Sandkaka var min salig mors standardrecept som alltid bakades till särskilda tillfällen. Hon smaksatte med konjak och det har jag själv fortsatt med. Det blir härlig konsistens med bara potatismjöl./Pia
