I had an opened can of coconut milk and I don't want to throw away food so I decided to use it in this cake. A moist cake with a taste of coconut.
65 g butter, soft
1.5 dl sugar
1 large egg
0.5 dl coconut milk
1 dl flour
2 tbsp desiccated coconut
2 tbsp desiccated coconut
3/4 tsp baking powder
1/4 tsp vanilla powder
one pinch of salt
Heat the oven to 175 C. Grease and flour a small loaf tin. Stir the butter and sugar. Add the egg and the coconut milk. Then add the flour, desiccated coconut, baking powder, vanilla and salt. Pour the batter into the loaf tin. Bake in the oven for about 30 minutes.

1,5 dl socker
1 stort ägg
0,5 dl kokosmjölk
1 dl mjöl
2 msk kokosflingor
2 msk kokosflingor
3/4 tsk bakpulver
1/4 tsk vaniljpulver
