Chewy cookies with crispy edges and with the taste of coffee and chocolate I do not say no to them :). I used chocolate with coffee flavor, but you can use regular chocolate too. I bought the coffee chocolate at Lidl. Good cookies, perfect to bring on a picnic.
Chewy Espresso Cookies
60 g butter
3/4 dl brown sugar
0.5 dl white sugar
1 egg yolk
0.5 tsp vanilla extract
1 1/4 dl flour
1 tbsp espresso powder
1/8 tsp baking soda
1/8 tsp salt
35 g coffee chocolate, roughly chopped
In a bowl stir the butter, brown sugar, and white sugar together. Add in the egg yolk and vanilla extract. Mix well. Then add the remaining ingredients. Shape the batter into balls a nd flatten them slightly. Leave room between the cookies. Bake the cookies at 175° C for about 10 minutes. Allow to cool.

0,5 dl strösocker
1 äggula
0,5 tsk vaniljextrakt
1 1/4 dl vetemjöl
1 msk espressopulver
1/8 tsk bakpulver
1/8 tsk salt
35 g kaffechoklad, grovt hackad
