Cardamom in baked goodies can be one of the tastiest flavors available, after chocolate of course :) I baked this moist cake with the taste of lemon and cardamom and it just got so good. And when you use ricotta in baked goods they become so moist and tasty. If you have not tried ricotta in pastries then I can really recommend doing so. Have a nice day!
Lemon Cardamom Cake
50 g butter, at room temperature
1 1/4 dl granulated sugar
1 egg
1 dl ricotta cheese
1 tsp lemon essence
1 dl wheat flour
1 tsp baking powder
1 tsp cardamom
Preheat oven to 175 degrees C. Grease and flour a small loaf pan. In a bowl stir together the butter and sugar until light and fluffy. Add the egg and stir. Then add the ricotta and lemon. Add the flour, baking powder and cardamom to the mixture and stir until smooth. Pour the batter into the prepared cake pan. Bake for 30-40 minutes. Let the cake cool in the pan for 10 minutes and then remove from pan to cool completely.
Citron-Kardemummakaka
50 g smör, rumstemperatur
1 1/4 dl strösocker
1 ägg
1 dl ricottaost
1 tsk citronessens
1 dl vetemjöl
1 tsk bakpulver
1 tsk kardemumma
Värm ugnen till 175 grader. Smörj och mjöla en liten brödform. Blanda smöret och sockret i en skål tills det är lätt och fluffigt. Tillsätt ägget och rör om. Tillsätt sedan ricotta och citron. Tillsätt mjöl, bakpulver och kardemumma i blandningen och rör om tills det är jämnt.
