Tart sweet muffins with a taste of currants and lemon. If you like baked goodies that are slightly tart, then these are for you. Moist and very good.
Lemon Red Currant Muffins
8 pcs
40 g butter, softened
3/4 dl sukrin sugar
1 egg
1 dl ricotta
1 dl wheat flour
1 tsp baking powder
pinch of salt
zest of 0.5 lemon
red currants
Preheat the oven to175°C. In a bowl, mix the butter and sugar together. Add in the egg and mix to combine. Then stir in ricotta and the rest of the ingredients. Divide the batter into 8 silicon muffin cups. Bake the muffins for approximately 15 minutes.
Citron Röda Vinbärsmuffins

40 g smör, mjukat
3/4 dl sukrinsocker
1 ägg
1 dl ricotta
1 dl vete mjöl
1 tsk bakpulver
nypa salt
zest av 0,5 citron
