Do you have chocolate over from Christmas? In these muffins I have used Fazer's chocolate with gingerbread flavor and I also mixed in gingerbread spice in the batter. For gingerbread flavor is so good. I'm not yet tired of Christmas flavors. Are you?
Pepparkaka-Chokladmuffins
100 g smör
75 g pepparkakschoklad
1 stort ägg
3/4 dl socker
3/4 dl farinsocker
2,5 dl vetemjöl
1,5 tsk bakpulver
1 tsk pepparkakskrydda
1 dl mjölk
Smält smör och choklad. Låt svalna. Vispa ihop ägg och socker tills fluffigt. Blanda i de torra ingredienserna tillsamman med smör-chokladblaningen och mjölken till en slät smet. Fördela smeten i 10 muffinsformar och grädda i 175 C i ca 15 minuter.
Gingerbread-Chocolate Muffins
100 g butter
75 g gingerbread chocolate
1 large egg
3/4 dl sugar
3/4 dl brown sugar
2.5 dl wheat flour
1.5 tsp baking powder
1 tsp gingerbread spice
1 dl milk
Melt the butter and chocolate. Let cool. Whisk together eggs and sugar until fluffy. Mix in the dry ingredients together with the butter-chocolate mixture and milk to a smooth batter. Divide the batter into 10 muffin cups and bake at 175C for about 15 minutes.
