Madeira Cake is a childhood memory for me. A fluffy cake that has a sand like texture. It melts in your mouth. It is made with potato flour and thus gluten-free. So incredibly good and I added rum essence to the cake, which gives it a great taste. Have you eaten Madeira cake as a child?
GF Sandkaka
2 ägg
1,5 dl strösocker
2 3/4 dl potatismjöl
1 tsk bakpulver
1 tsk romessans
160 g smör, smält
Vispa ägg och socker vitt och fluffigt. Tillsätt potatismjöl, bakpulver och romessans och blanda väl. Till sist blanda i det smälta varma smöret. Häll smeten i en väl smord och mjölad form. Grädda kakan i 175 C i ca 25 minuter. Låt svalna.

1.5 dl granulated sugar
2 3/4 dl potato flour
1 tsp baking powder
1 tsp rum essence
160 g butter, melted
