Crunchy cookies with a taste of vanilla and caramel. I use soft toffee candies in these. They melt so deliciously in the cookies which makes them extra good. A cup of coffee and some cookies and you have the perfect coffee moment.
Toffee Cookies

50 g vegan margarine / butter, soft
0.5 dl brown sugar / Sukrin gold sugar
1.5 tbsp fibre syrup, Sukrin
0.5 tsp vanilla essence
1 1/4 dl wheat flour
0.5 tsp baking powder
one pinch of salt
soft toffee rolled into small balls
Preheat the oven to 175 C. Stir together the butter, sugar, syrup and vanilla essence. Stir in the flour, baking powder and salt. Roll the mixture into about walnut sized balls and put balls of toffee on them. Place the cookies on a baking sheet lined with parchment paper. Bake for about 10 minutes.

0,5 dl farinsocker / Sukrin gold socker
1,5 msk fibersirap, Sukrin
0.5 tsk vaniljessens
1 1/4 dl vetemjöl
0,5 tsk bakpulver
en nypa salt
mjuk toffee rullade till små bollar
Värm ugnen till 175 C. Rör ihop smör, socker, sirap och vaniljessens Rör i mjöl, bakpulver och salt. Rulla blandningen i valnötsstora bollar och lägg bollar av toffee på dem. Placera kakorna på en bakplåt klädd med bakplåtspapper. Grädda i ca 10 minuter.
