Mint chocolate filled cookie cups that are perfect to bring on a picnic, which we did last weekend when we had such beautiful and warm weather. We took the bikes to a park, bought coffee there from the Espressofabriek and enjoyed the cookies. Have a nice day!
Chocolate Mint Filled Mini Cookie Cups
14 pcs
50 g butter, softened
0.5 dl brown sugar
2 tbsp caster sugar
1 small egg
0.5 tsp vanilla extract
1.5 dl plain flour
1/4 tsp baking powder
chocolate mint spread
Stir together the butter and sugars. Add the egg and vanilla and stir well. Add the flour and baking powder and stir until smooth. Form the batter into 14 balls and put them in a mini muffin cup. Make a dwell in the center and fill it with the spread. Bake at 175 C for about 10 minutes.
