These zucchini patties became so tasty. I wish I had them right now on my plate :) Very easy to make, but remember to fry them on medium heat and not to turn them too early. We ate them with sweet potatoes, salad and a sauce made of quark and lemon.
Zucchinibiffar
1 zucchini, ca 300 g
1 msk röd lök, hackad
1 ägg
0,5 dl riven ost
1-2 tsk fiberhusk
0,5 tsk salt
1/8 tsk vitlökspulver
paprika
svartpeppar
Riv zucchinin grovt. Krama ur vätskan från den och låt sedan rinna av i en sil. Blanda den avrunna zucchinin med de övriga ingredienser i en bunke och ställ åt sidan, låt svälla i ca 15 min. Om smeten känns för lös tillsätter du lite mera fiberhusk. Hetta upp olja i en stekpanna. Klicka ut små biffar med en matsked. Stek biffarna på medelvärme ca 4-5 minuter på varje sida.
Zucchini Patties
1 zucchini, about 300 g
1 tbsp red onion, chopped
1 egg
0.5 dl grated cheese
1-2 tsp psyllium husk
0.5 tsp salt
1/8 tsp garlic powder
pepper
black pepper
Grate the zucchini roughly. Squeeze the liquid from it and allow to drain in a sieve. Mix the drained zucchini with the other ingredients in a bowl and set aside, allow to swell for about 15 minutes. If the batter feels too loose, add a little more psyllium husk. Heat oil in a frying pan. Make small patties with a tablespoon, fry the patties on medium heat about 4-5 minutes on each side.
