These are creamy squares with taste of ricotta and rum. They are not so sweet, so if you know you like sweeter things, then you can add sugar to the crumb. I liked them like this, but my husband would have wanted them to be a little sweeter :) They are good with a cup of coffee.
Ricotta & Rum Crumb Squares
Crust/Crumb Mixture:
2.5 dl all purpose flour
0.5 tsp baking powder
one pinch of salt
75 g butter
Filling:
2.5 dl ricotta cheese
1 dl stevia sugar or regular sugar
2 eggs
0.5 tsp vanilla powder
1/4 tsp rum aroma
Preheat the oven to 175 C degrees. Line a baking dish (18 cm x 18 cm) with parchment paper. In a bowl stir together the flour, baking powder, salt and butter to a crumb mixture. In another bowl, mix the ricotta cheese, sugar, eggs, vanilla and rum. Press 2/3 of the crumb mixture into the bottom of the prepared baking dish. Pour the ricotta mixture over the crust and sprinkle the remaining crumb mixture over the top of the ricotta filling. Bake in the oven for about 25 minutes. Let the cake cool before cutting into pieces.

Ricotta & Rom Smulrutor
Smuldeg:
2,5 dl vetemjöl
0,5 tsk bakpulver
en nypa salt
75 g smör
Fyllning:
2,5 dl ricottaost
1 dl steviasocker eller vanligt socker
2 ägg
0,5 tsk vaniljpulver
1/4 tsk rom-arom
Värm ugnen till 175 C grader. Klä en bakform (18 cm x 18 cm) med bakplåtsapper. I en skål blanda mjöl, bakpulver, salt och smör till en smulblandning. Blanda ricottaost, socker, ägg, vanilj och rom i en annan skål. Tryck 2/3 av smulblandningen i botten av bakformen. Häll på ricottablandningen och strö sedan på den resterande smulblandningen. Baka i ugnen i ca. 25 minuter. Låt kakan svalna innan den skärs i bitar.
