Merry Christmas! We are in Finland with our families! Sweet small muffins with taste of chocolate and Dutch gingerbread cookies. I want muffins that are moist and rather a little undercooked than dry. So do not overbake these. But if you like more cakey muffins, bake them for about 12 minutes. And if you do not have Dutch gingerbread cookies, you will of course use regular gingerbread cookies.
Chokladmuffins med Kruidnoten
7 st små
50 g smör
1 dl kokossocker
1 dl vetemjöl
0,5 dl mandelmjöl
0,5 dl kakaopulver
3/4 tsk pepparkakskrydda
0,5 tsk bakpulver
1 ägg
3/4 dl mjölk
0,5 dl hackade kruidnoten (Holländska pepparkakor)
2,5 msk chokladknappar
Smält smöret och låt det svalna. Blanda i sockret. Blanda sedan i resterande ingredienser. Fördela smeten mellan 7 silikonmuffinsformar. Grädda i 175 C i ca 10-12 minuter. Dom får gärna vara lite kladdiga inuti.

1 dl wheat flour
0.5 dl almond flour
0.5 dl cocoa powder
0.5 tsp baking powder
1 egg
3/4 dl milk
0,5 dl chopped kruidnoten (Dutch gingerbread)
