Have you tried the combination of coconut milk and lime juice? It's a very good combo according to me. I remember when we lived in Finland the grocery store sold a tetra with that taste combination, but it's just as good to use coconut milk and lime juice separately. Today's recipe is a vegetable sauce with coconut milk and lime juice.
Grönsakssås med Lime och Kokosmjölk
1 rödlök, hackad
1 morot, skivad
1 liten röd paprika, tärnad
0.5 zucchini, tärnad
1 dl kokta svarta bönor
1 msk jordnötssmör
2-3 dl kokosmjölk
0,5 limesaft
salt
svartpeppar
Värm en kastrull med kokosolja. Lägg i lök och fräs en stund. Tillsätt morot, paprika, zucchini och stek i några minuter. Blanda sedan i svarta bönor, jordnötssmör, kokosmjölk och låt sjuda i 15 minuter. Krydda med limesaft, salt och svartpeppar. Servera med kokt ris eller quinoa.

1 small red pepper, diced
0.5 zucchini, diced
1 dl cooked black beans
1 tbsp peanut butter
2-3 dl coconut milk
0.5 lime juice

black pepper
Heat a saucepan with coconut oil. Add the onion and fry for a while. Add carrot, peppers, zucchini and fry for a few minutes. Then mix in black beans, peanut butter, coconut milk and let simmer for 15 minutes. Season with lime juice, salt and black pepper. Serve with boiled rice or quinoa.
