Today's recipe is chewy cookies with chocolate and oatmeal. I baked them for 11 minutes, and at that time they look a bit un-cooked in the middle. But they should look like that to get that chewy consistency. Allow them to cool completely before eating them.
Chewy Oatmeal Chocolate Cookies
11 pcs
50 g butter, room temperature
0.5 dl white sugar
0.5 dl brown sugar
1 small egg
1.5 dl rolled oats
0.5 dl wheat flour
1/4 tsp baking powder
pinch of salt
40 g dark chocolate, chopped
Pre-heat the oven to 175 C. Line a cookie sheet with parchment paper and set aside.
In a bowl stir together the butter, white and brown sugar. Add the egg and whisk until combined. Add the dry ingredients and mix. Lastly, fold in the chocolate. Scoop heaped tablespoons of the cookie dough onto the lined cookie sheet, leaving about 5 cm between the cookies. Bake for about 10-12 minutes or until the cookies are golden brown. Allow the cookies to cool completely.

50 g smör, rumstemperatur
0,5 dl strösocker
0,5 dl farinsocker
1 litet ägg
1,5 dl havregryn
0,5 dl vetemjöl
1/4 tsk bakpulver
en nypa salt
40 g mörk choklad, hackad
Värm ugnen till 175 C. Lägg bakplåtspapper på en plåt och ställ åt sidan.
I en skål blanda smör, strösocker och farinsocker. Tillsätt ägget och blanda väl. Tillsätt de torra ingredienserna och blanda. Slutligen rör ner chokladen. Skopa matskedsstora högar av kexdegen på plåten och lämna ca 5 cm mellan kexen. Baka dem i ca 10-12 minuter eller tills kexen är guldbruna. Låt dem svalna helt.
