I think it's good with lemon flavored pastries. I have a jar of lemon curd at home, so I thought I would bake muffins with lemon curd in the batter and make a filling on both cream cheese and lemon curd. The muffins were good with a fresh taste of lemon.
Muffins med Citron Cheesecake fyllning
6 st
60 g smör
1 dl socker
1 ägg
1.5 dl vetemjöl
3/4 tsk bakpulver
2 msk citroncurd
1 msk mjölk
fyllning:
1,5 msk citroncurd
1,5 msk philadelphiaost
1 msk florsocker
Blanda smör och socker fluffigt. Tillsätt ägget och blanda väl. Blanda i mjöl och bakpulver. Rör till sist i citroncurd och mjölk. Fördela hälften av smeten i 6 muffinsformar (jag använder en muffinsplåt) och lägg på en klick fyllning. Toppa sedan med resterande smet. Grädda dem i 175 C i ca 18-20 minuter.

1.5 dl wheat flour
3/4 tsp baking powder
2 tbsp lemon curd
1 tbsp milk
filling:
1.5 tbsp lemon curd
1.5 tbsp philadelphia cheese
1 tbsp icing sugar
Stir the butter and sugar until fluffy. Add the egg and stir well. Mix in flour and baking powder. Finally stir in lemon curd and milk. Divide half of the batter into 6 muffin cups (I use a muffin pan) and add a dollop of the filling. Then top with the remaining batter. Bake the muffins at 175 C for about 18-20 minutes.
