I had both boiled potatoes and aquafaba to use and I wanted to try if it is possible to make potato pancakes without eggs. And yes it works very well. I fried small pancakes and think it's good to do that, because some of the pancakes were harder to turn around. But they taste so good and dill gives such a good flavour to the pancakes.
Potatis & Dill Plättar
2,5 dl mosad potatis
0,5 dl flerkornsmjöl
3 msk aquafaba
1 dl mandelmjölk
1/4 tsk salt
en nypa svartpeppar
dill, efter smak
Blanda ihop alla ingredienser i en skål. Låt smeten svälla en stund, ca 30 minuter. Smält olja i en stekpanna och stek små plättar på båda sidor tills gyllene. Servera med lingonsylt och sallad.

1 dl almond milk
