Next time you have left-over cooked potatoes, you can bake potato scones. They are moist and keep soft and moist even until the following day. Good to eat with butter and cheese!
Potatis Scones
1,5 dl flerkornssmjöl
1 dl havregryn
1 dl kall potatis, mosad
1 tsk bakpulver
0,5 tsk salt
25 g smör
0,5 dl mjölk
Värm ugnen till 200 C grader. Blanda mjöl, havregryn, potatis, bakpulver och salt i en bunke. Blanda i smöret till en smulig massa. Rör snabbt ner mjölken. Forma degen till en rund kaka och skåra den i fyra bitar. Grädda i ca 20 minuter.

1.5 dl multigrain flour
1 dl oatmeal
1 dl cold cooked potato, mashed
1 tsp baking powder
0.5 tsp salt
25 g butter
0.5 dl milk
Heat the oven to 200 degrees C. Mix flour, oatmeal, potato, baking powder and salt in a bowl. Mix in the butter to a crumbly mixture. Quickly stir in the milk. Form the dough into a round cake and cut it into four pieces. Bake for about 20 minutes.
