Rhubarb is so delicious and perfect to use in baked goodies. I filled these mini cakes with rhubarb compote and they turned out so good. I topped them with a mixture of icing sugar and water, but melted white chocolate also works.
9 st
60 g mjukt smör
0,5 dl kokossocker
1 dl vetemjöl
1,5 msk potatismjöl
0,5 tsk bakpulver
fyllning: rabarberkompott
Rör ihop smör och socker fluffigt och blanda sedan i resten av ingredienserna. Forma små bollar och lägg i små formar. Grädda i 175 C grader i ca 12-15 minuter. Gör en fördjupning och lägg i en klick rabarberkompott.
Mini Cakes with Rhubarb
9 pcs
60 g soft butter
0.5 dl coconut sugar
1 dl wheat flour
1.5 tbsp potato flour
0.5 tsp baking powder
filling: rhubarb compote
Stir together butter and sugar and mix in the rest of the ingredients. Shape into small balls and put in mini muffin cups. Bake at 175 ° C for about 12-15 minutes. Make a cavity in them and fill them with rhubarb compote.
