Happy Midsummer! Today you get a recipe for something you can make during the Midsummer weekend, namely vegetarian hot dogs. They are very good and filling. I found the recipe on Kate's blog.
Lentil Carrot Veggie Hot Dog

200 g dried red lentils rinsed
700 ml vegetable stock
1 tsp olive oil
1 onion finely diced
2 carrots grated
1,5 tsp smoked paprika
1 tsp garlic powder
salt
pepper
150 g plain flour
Cook the lentils in the stock for 10 minutes or until tender, then drain.
Heat the oil in a frying pan over a medium heat, saute the onion for a few minutes. Add the grated carrot and sautee for 5 minutes until soft.
Put the cooked lentils, carrot mixture, spices, salt and pepper to a food processor and mix until it’s thick and well combined.
Pour the mixture into a bowl and mix in 3 tablespoons of the flour. Add more flour, a tablespoon at a time, until a thick and manageable consistency. You may not need all of the flour.
Roll into hot dog-like shapes, place on a plate, cover and refrigerate for at least 30 minutes.
Heat oil in a frying pan and add some of the hot dogs. Fry, gently turning often, until golden. Repeat in batches. Serve in a hot dog bun.

Lins Morot Hot Dog
8 st
200 g torkade röda linser sköljda
700 ml vegetabilisk buljong
1 tsk olivolja
1 lök finhackad
2 morötter rivna
1,5 tsk rökt paprika
1 tsk vitlökspulver
salt
peppar
150 g vetemjöl eller glutenfritt mjöl
Koka linserna i buljongen i 10 minuter eller tills de är mjuka. Häll bort vattnet.
Värm olja i en stekpanna, stek löken i några minuter. Tillsätt de rivna morötterna och stek i 5 minuter tills mjuka.
Lägg de kokta linserna, morotsblandningen, kryddorna, salt och peppar i en matberedare och blanda tills det är tjockt och väl kombinerat.
Häll blandningen i en skål och blanda i 3 matskedar av mjölet. Lägg till mer mjöl, en matsked i taget, tills du har en tjock och hanterbar konsistens. Du kanske inte behöver allt mjöl.
Rulla i varmkorvliknande former, placera på en tallrik, täck och kyl dem i minst 30 minuter.
